Grilled cheese with ham

mayonnaise
dijon mustard

gruyere cheese

2 slices
sourdough bread
unsalted butter
spread mayo on the inside of one of the bread slices and mustard on the inside of the other. The mayo and mustard act as a glue to help keep everything in place
layer sandwich with half of the cheese, all the ham, and the rest of the cheese. We layer both sides with cheese because it will melt in the cheese and ham and help keep everything in place
on medium low heat, weigh down the sandwich with a light weight and cook until the bottom of the bread is golden brown. Then flip and repeat. Weighing it down will help ensure everything melts and warms through
Let it rest for 5 minutes on a wire rack and then enjoy Giving it some time will allow things to firm up enough so the cheese doesn't just ooze out and the ham doesn't slip out
