Heat 1 tablespoon of butter pan over medium-low heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes.
Assemble the sandwich with bread -> mustard -> half the cheese -> pastrami -> sauerkraut -> onion -> remaining cheese -> mustard -> bread
Add remaining butter to the pan over medium heat. Place the sandwich in the skillet, weighed down with something. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted
