Preheat your oven to 400°F
Slice the chicken breast in half horizontally to create two thin pieces and season both sides with salt and pepper
Place flour in one shallow dish. Beat the egg in a second shallow dish. Mix breadcrumbs and grated Parmesan cheese in a third shallow dish.
Dredge each chicken piece in flour, shaking off excess. Dip into the beaten egg, allowing excess to drip off. Coat with the breadcrumb and Parmesan mixture, pressing to adhere.
Heat olive oil in a skillet over medium-high heat. Shallow fry the chicken until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
In a baking tray, cover chicken with marinara sauce and the mozzarella cheese. Bake in the preheated oven until the cheese is melted and bubbly, about 15-20 minutes.
