Crispy Smashed Potatoes

yukon gold potato

extra virgin olive oil
Add potatoes to a pot and add enough water to cover them. Add 1 tbsp salt and bring it to a boil. Cook potatoes until soft, you should be able to easily poke through the potatoes with a knife ~20 mins
preheat the oven to 400°F
add potatoes on a baking tray and smash them. You can use whatever you want to smash then like a fork or spice jar. Smashing them thinner will make them crisper and thicker will make them fluffier
leave them on the tray to steam dry them for about 5 minutes
drizzle them with olive oil, salt, and pepper and bake them until they're golden and crispy ~40 minutes
