tomato sauce
mix flour, yeast, salt in a bowl. Add water and mix together and form into a ball. Set aside for 10 minutes and then turn dough out onto a countertop and knead until a smooth, silky ball has formed, about 10 minutes
transfer dough to a bowl and cover with plastic wrap. Let it rest at room temperature until the dough has doubled ~2 hrs)
add 1 tbsp olive oil to the bottom of the pan and add the dough, coating it in the oil. Spread it out as much as you can without tearing, it wont reach the edges. Cover in plastic and let rest for 30 minutes to let the dough relax. Stretch the dough out again so it reaches the edges. Let it rest again for 30 minutes. Towars the end, preheat the oven to 550°F
add mozzarella cheese cubes to the pan and sppon sauce over the surface. Top with pepperoni
bake in the oven until the cheese on the top starts to lightly brown ~15 mins
