Loaded baked potatoes

unsalted butter
preheat oven to 375
poke holes into the potato with a fork and bake until a fork can easily be inserted into the center for an hour
towards the end of baking, cook the bacon and dice
let the potato rest for a couple minutes and then slice lengthwise and scoop the flesh into a bowl
add the butter to the bowl and roughly mash the potatoes so the butter is mixed in but the potatoes are still chunky. Season with salt an pepper
scoop the potatoes back into the skins. Top with cheese and melt with the residula heat of the oven. Add sour cream, bacon bits, and chives
