Chilled Pea Soup

frozen peas
15 g
yellow onion
, diced, diced

garlic
200 ml
vegetable broth
10 ml
extra virgin olive oil

mint
20 ml
heavy cream
5 ml
chives
, chopped, chopped
Heat the olive oil in a small saucepan over medium heat. Add the onion and garlic, and sauté until softened ~2–3 minutes
Add the peas and broth. Bring to a boil then simmer until peas are tender and bright green for ~3–5 minutes
Add the mint leaves and blend the soup until smooth
Stir in cream and season with salt and pepper to taste
Chill in the refrigerator for at least 1 hour
Serve cold, garnished with chives
