Penne alla Vodka

Vodka sauce is a rich, creamy tomato-based pasta sauce that combines the bright acidity of tomatoes with the smoothness of heavy cream and a subtle kick from vodka

penne
15 g
extra virgin olive oil
50 g
yellow onion
, diced, diced
3 g
garlic
, minced, minced, minced
1 pinch
red pepper flakes
15 ml
vodka
canned whole san marzano tomatoes
heavy cream
parmigiano reggiano
, finely grated, finely grated
Bring a pot of salted water to a boil and cook the penne until al dente. Reserve a few tablespoons of pasta water, then drain
In a skillet over medium heat, add olive oil and sauté the onion until soft ~2–3 minutes. Add garlic and red pepper flakes (if using) and cook for 30 seconds
Add the vodka and simmer for 1–2 minutes to let the alcohol mostly evaporate
Stir in the crushed tomatoes and simmer, stirring occasionally until slightly thickened ~5–7 minutes,
For a smooth sauce blend with and immersion blender
Lower the heat, stir in heavy cream and simmer for 1–2 minutes. Add Parmesan cheese and season with salt and black pepper
Toss the drained penne into the sauce, adding a splash of reserved pasta water if needed
Plate and garnish with extra Parmesan and fresh basil if desired
