Step 1

Shape the ground beef into a loose ball (do not compress tightly)

Step 2

Heat a cast-iron skillet or heavy pan over medium-high heat. Place the beef ball on the hot skillet and top with all of the sliced onions. Use a sturdy spatula to smash the beef into the pan and season with salt and pepper. Cook until the edges are browned and onions are soft ~2 minutes

Step 3

Flip the burger (onions will now be on the bottom). Place a slice of cheese on top, if using. Place the top hamburger bun on top of the cheese and the button bun on top of that. Cover the pan to let them steam with the onion vapor. The onions will cook so the book bits are crispier and then there's a layer of more caramelized onions, and then a layer of more steamed onions

Step 4

Remove the burger from the pan and take the bottom bun from the top and put it on the bottom
