Step 1

Heat a pan with olive oil over medium-high heat and cook shallots until translucent ~2 mins. Add garlic and sauté until fragrant ~30s

Add the spinach and a pinch of salt and cook down. Add dill and sauté

Step 3

In a mixing bowl, combine full fat cream cheese with feta cheese and parmesan cheese. Add the cooked spinach mixture, egg, and stir to combine

Step 4

roll out the puff pastry, cut into 3-4 inch squares, and place on a parchment lined baking sheet

Step 5

Add about ~2 tbsp of the mixture to each square of puff pastry. Beat an egg to make an egg wash and brush the edges puff pastry. Crimp the egg washed sides together

Step 6

Place entire baking sheet in fridge for 10 minutes and preheat the oven to 450°F

Step 7

Remove from the fridge and brush each pastry with the egg wash. Place in the oven for 20 minutes, rotating the baking sheet at 10 minutes

Step 8

Remove from oven and let cool on a wire rack
