Alton Brown-style Chewy Chocolate Chip Cookies

Brown the butter over medium heat
Pour the browned butter into a bowl. Add the granulated sugar and brown sugar. Beat until the mixture is no longer grainy.
In a separate bowl, whisk together the wet ingredients. Allow the butter-sugar mixture to cool a bit (so it won’t cook the eggs), then mix in the wet ingredients.
Mix the dry ingredients together and then slowly mix them into the wet mixture and mix until just combined
Mix in the chocolate chips. Form the dough into 40g portions and place them on a baking sheet. Chill the dough for at least one hour. Towards the end of chilling, preheat the oven to 375°F (190°C)
Bake for 15 minutes, rotating halfway. Let cool on a wire rack for 5 minutes before eating
