Claire Saffitz Style Chocolate Chip Cookies

unsalted butter

heavy cream

granulated sugar
dark brown sugar

Make Brown Butter and let it rest until room temperature
Add heavy cream to the butter to replace the water we just removed and mix well. Add both sugars and whisk until smooth.
Add in the wet ingredients and again whisk until smooth
In a separate bowl, mix together all the dry ingredients. Add them to the wet ingredients and mix until you no longer see bits of flour
Fold in chocolate chips and portion out the dough. Place on a lined baking sheet, cover with plastic wrap, and place in fridge for 12-24 hours
Preheat the oven to 350°F. Take out the dough from the fridge once pre-heated and bake until golden ~18 minutes. Remove from oven and let cool.
