Light Caramel Syrup Glaze

A sweet building block used to coat and caramelize moisture-rich ingredients in a pan. Used for things like bananas foster and crêpe fillings

unsalted butter
light brown sugar
1 pinch
kosher salt
15 ml
water
Melt the butter in a pan over medium-low heat
Add the remaining ingredients and stir until sugar is fully dissolved. Simmer 30-60 seconds until slightly thick and glossy
Add your main ingredient and cook until coated and slightly reduced. Add water as needed to prevent crystallization
