Caramelized onion gruyere focaccia

instant yeast

extra virgin olive oil

sweet onion

gruyere cheese
make focaccia dough (6"x6" pan)
make Caramelized Onion but only cook until golden brown because they will cook more while baking
top with caramelized onion and then shredded gruyere
bake on a lower rack for 20 minutes until brown
remove the focaccia from the pan and transfer to a wire rack. Optionally turn off the oven and put the focaccia back in the over for 5 minutes until the sides are golden
